End of Green

March blew by in a hurry.  Spring is in full force in North Texas, where I reside.  Wind, rain and weeds abound.  It seems yard work has taken over in the few free moments I can find.  I couldn’t, however let March and “green month” end without one final post. Continue reading

Zesty Lime Pie

When warm weather finally rolls around I find myself in the mood for cool and refreshing lemon pie.  It’s one of my favorite pies – maaaaybe my absolute favorite!  In lieu of March being my “green” month I switched the citrus and made a lime pie.  Limes are beautiful little fruits, bright and colorful, tart and juicy, and full of healthy vitamin C.   Continue reading

Avocado-Buttermilk Dressing

If you’ve been following my blog you might have noticed that bottled salad dressing is not my favorite.  I’ll take oil and vinegar over bottled dressing any day.   It’s such a simple affair to whip up one’s own dressing and the rewards are terrific. Well worth the effort.

This is one of those recipes I came up with when the avocados looked good and were priced right.  I found myself with a bowl full on the kitchen counter .   Continue reading

A Little Sweet Treat

Home sweet home!  Miss T and I had a great time away from home but it is always sweet to come home.  We had some fantastic “girl” time while down in Austin.  Austin is a beautiful town, vibrant, busy, and earthy.  This past weekend the music festival SXSW, which stands for south by southwest, was in full force. Continue reading

Spring Break

Spring Break!  It’s half over.  UGH!  That went waaaaay too fast.  I’ll be taking a short break from blogging for the next few days.  If you too are on spring break I hope you are making the most of it and having a ball at whatever you are doing.  Miss T and I will be traveling down to the hill country of Texas, a glorious place, to hang with LuLu for a few days.  I have however been busy in the kitchen leading up to our excursion and when we return I will be posting two superb recipes for you to enjoy.  Avocado Buttermilk Dressing and Chocolate Zucchini Muffins.  I hope to see you visiting again next week.  I plan on fully enjoying my time with my girls.

Stay green!

Avocado & Mango Salad

So avocado is green, right?  Right!  Mango does not come from anywhere near where I live but I went for it anyway, as they looked unblemished, plump and juicy!  Today’s post of Avocado & Mango Salad is a delicious way to get into the mood for spring. Continue reading

Uncle Ray’s Green Chili

Just when you think warm weather is here to stay old man winter blows through and reminds us that winter isn’t quite over.  Chilly temps, outrageous winds, rain and grey skies played perfectly into my hand for “going green” month.   Continue reading

Green Apple Salsa

This is only my second “Green” post and I am having so much fun choosing foods and recipes to share with you, my readers.  The produce section has taken on a whole new appeal, so many green choices to work with!

Let’s talk about bees and how important they are to the production of food.  Natural, healthy, good for us food.  Bees pollinate about 70% of all the foods we eat – or should eat!  Can you imagine a world without watermelon, brazil nuts, macadamias, mangos, Continue reading

Going Green

This month we are “going green”.  I’ve decided for the month of March to bring you recipes that are green.  This could be anything from peas to pesto, beans to broccoli, tea to thyme.  When I was trying to settle on a March idea for my blog, several thoughts entered my head. Continue reading

Leap Day Soup

I concluded that with today being Leap Day in this Leap Year I should take full advantage of it and write one last post featuring “soup”.  Ah, yes soup month has come to an end.

Today’s soup is a Moroccan Chicken and Butternut Squash Soup.  Somewhat of a departure for me as I have never made anything Moroccan.   Continue reading
