Honey, Orange & Ginger Cookie

I‘ve decided that baking cookies, while playing Christmas carols and raising money for kids with cancer is at the top of my “favorite things” list this year.  I was utterly thrilled when I discovered The Great Food Blogger Cookie Swap

hosted by Lindsey of Love and Olive Oil and Julie of The Little Kitchen.  Not only did I get to spend a couple of afternoons in my sunny kitchen, singing along to my favorite Christmas music and baking dozens of cookies but I did my part, albeit small, to help kids with cancer.

If you haven’t heard of Cookies for Kids’ Cancer, it is a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer, which claims the lives of more children in the US than any other disease. A small donation to Cookies for Kids’ Cancer was matched by OXO® – dollar for dollar (up to $100k) and all participants received a free Be a Good Cookie Spatula. I’m not sure how it happened but they sent me an orange one!  Totally made my day.  It’s a win win cookie swap.

Each participant is matched with 3 other cookie swap players, we bake 3 dozen cookies and mail one dozen to each of our three matches.  I sent Honey, Orange & Ginger Cookies to Carla@ Carla’s Confections , Kathryn@ Fleur-De-Licious, and Jessica@A Kitchen Addiction.  Please take a minute to stop by their blogs – they are all baking cookies for you to drool over. My Honey, Orange & Ginger Cookies are chewy, with a nice bit of zing from the orange zest and ginger.  If you’re mailing goodie packages this Christmas, these cookies should hold up well in transit too.  The extras I baked to keep my man, Dan appeased were gone in a flash.

I received yummy pepperminty sugary cookies from Jen@Sweet-Morris, melt in your mouth orange shortbread from Sarah@Frankly Entertaining and addictive pecan bars from Andrea@Quest for Delish.  I can attest to the fact that these girls know how to bake delicious cookies so stop by and check out some of their recipes.

How lucky am I – OXO sent me an orange cookie spatula!

Honey, Orange & Ginger Cookies

Ingredients:
1/2 cup butter, softened
1/3 cup white sugar
1/3 cup brown sugar, firmly packed
1/2 cup honey
1 tsp. orange extract
1 large egg
2 1/4 cups all-purpose flour
1 tbsp. orange zest
1 tsp. ground ginger
1/2 tsp. baking soda
1/2 tsp. baking powder

Preheat oven to 350*.  Beat sugar and butter at medium speed with a heavy-duty electric stand mixer until creamy.  Add honey, orange extract and egg, beating until blended.  In a medium bowl stir together dry ingredients.  Gradually add dry ingredients to sugar mixture beating until blended.  Cover and chill at least 30 minutes and up to 1 hour.  Shape dough into 1″ balls, roll in sugar.  Place 2″ apart on ungreased baking sheets and slightly flatten each with the bottom of a glass.  Bake 8-10 minutes or until lightly browned.  Cool completely on wire racks.

    Cool blog! I love cookie, children, and the idea of helping them sounds like fun.
    I’m going to a cookie swap with teachers tomorrow night. We’ve been doing this for several years. It’s not to raise funds for kids but to release a lot of tension we have at this time of year! Lol! Anyway! See you Saturday night!
