I‘ve decided that baking cookies, while playing Christmas carols and raising money for kids with cancer is at the top of my “favorite things” list this year. I was utterly thrilled when I discovered The Great Food Blogger Cookie Swap
hosted by Lindsey of Love and Olive Oil and Julie of The Little Kitchen. Not only did I get to spend a couple of afternoons in my sunny kitchen, singing along to my favorite Christmas music and baking dozens of cookies but I did my part, albeit small, to help kids with cancer.
If you haven’t heard of Cookies for Kids’ Cancer, it is a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer, which claims the lives of more children in the US than any other disease. A small donation to Cookies for Kids’ Cancer was matched by OXO® – dollar for dollar (up to $100k) and all participants received a free Be a Good Cookie Spatula. I’m not sure how it happened but they sent me an orange one! Totally made my day. It’s a win win cookie swap.
Each participant is matched with 3 other cookie swap players, we bake 3 dozen cookies and mail one dozen to each of our three matches. I sent Honey, Orange & Ginger Cookies to Carla@ Carla’s Confections , Kathryn@ Fleur-De-Licious, and Jessica@A Kitchen Addiction. Please take a minute to stop by their blogs – they are all baking cookies for you to drool over. My Honey, Orange & Ginger Cookies are chewy, with a nice bit of zing from the orange zest and ginger. If you’re mailing goodie packages this Christmas, these cookies should hold up well in transit too. The extras I baked to keep my man, Dan appeased were gone in a flash.
I received yummy pepperminty sugary cookies from Jen@Sweet-Morris, melt in your mouth orange shortbread from Sarah@Frankly Entertaining and addictive pecan bars from Andrea@Quest for Delish. The Great Food Blogger/Cookies For Kids Cancer Swap next year. After all baking, wrapping and shipping, not to mention receiving and eating lots of cookies is at the top of my favorites this Christmas season and I’ll want a repeat next year.
Honey, Orange & Ginger Cookies
1/2 cup butter, softened
1/3 cup white sugar
1/3 cup brown sugar, firmly packed
1/2 cup honey
1 tsp. orange extract
1 large egg
2 1/4 cups all-purpose flour
1 tbsp. orange zest
1 tsp. ground ginger
1/2 tsp. baking soda
1/2 tsp. baking powder
Preheat oven to 350*. Beat sugar and butter at medium speed with a heavy-duty electric stand mixer until creamy. Add honey, orange extract and egg, beating until blended. In a medium bowl stir together dry ingredients. Gradually add dry ingredients to sugar mixture beating until blended. Cover and chill at least 30 minutes and up to 1 hour. Shape dough into 1″ balls, roll in sugar. Place 2″ apart on ungreased baking sheets and slightly flatten each with the bottom of a glass. Bake 8-10 minutes or until lightly browned. Cool completely on wire racks.
